After roasting, coffee naturally releases carbon dioxide in a process known as de-gassing. Brewing coffee too soon can result in uneven extraction, preventing the full flavour of the coffee from shining through.
For whole beans, the sweet spot is typically between 7 and 28 days after roasting. By this stage, the coffee has had enough time to de-gas while still retaining its vibrant aromas and complex flavours. That's why it's always worth checking the roast date on your bag, rather than simply relying on the best-before date.

If you buy your coffee pre-ground, freshness becomes even more important. Once coffee is ground, it begins to lose its aroma and flavour much more quickly due to increased exposure to oxygen. While brewing immediately after grinding is ideal, proper storage can help preserve its quality. Be sure to keep your coffee in an airtight container, away from light, heat, moisture and strong odours.
Finally, remember that the correct grind is just as important as freshness. Different brewing methods require different grind sizes, so choosing the right grind for your brewer will help you get the very best from every cup.
