If you've ever looked at a bag of coffee and wondered what Arabica or Robusta means, you're not alone. These are the two most widely grown coffee species in the world and while they both come from the coffee plant family, they produce very different cups.
Arabica is prized for its refined and complex flavour. Depending on where it's grown and how it's roasted, you might discover notes of citrus, berries, florals, caramel or chocolate. It typically has a brighter acidity, a smoother mouthfeel and a sweeter finish, making it the coffee of choice for most specialty roasters.
Arabica plants thrive at higher altitudes where cooler temperatures allow the cherries to mature more slowly, developing greater flavour complexity. They are also more delicate and require more care to cultivate, which contributes to their higher price.
Robusta, on the other hand, is exactly what its name suggests—more robust. It grows well at lower altitudes, is naturally more resistant to pests and disease and produces higher yields. It also contains almost twice as much caffeine as Arabica, giving it a stronger and bolder character.
In the cup, Robusta is typically more bitter, with earthy, woody and nutty flavours. It has lower acidity, a fuller body and produces a thick, rich crema, which is why it's often used in traditional Italian espresso blends.
