How we ensure our coffee is the best: Insights from our roaster

Coffee roasting, it could be argued, is both science and art. A minor adjustment in heat, roasting time, green beans, could all contribute to different tastes and end results. So we sat down with our Roaster, Mikey, to get the low-down on what his process is as he strives to create the perfect cup.

It starts with the beans

⁠We source only the highest quality greens from our local suppliers. All the different origins in our various blends have a SCA score of above 80. Our single origin that changes regularly has a SCA score of 85 and up. This ensures that our customers get the best coffee on the market at any given time.

Hand roasting only, no AI here

Artisanal roasting- to be classified as a true artisanal roaster means that you don't use any form of software to help you through the roasting process. This is much more hands-on meaning you have to stand at the roaster keeping an eye on the beans through all the phases of the roast to make the necessary adjustments required such as, air flow, drum speed, flame and gas manipulation. Hand roasting is definitely a form of art.

 

Individual roasting

We roast every origin of green coffee separately (no pre-mixing or blending of green beans before roasting). This ensures that every origin is treated with the respect it deserves and roasted to a temperature that best highlights the origin's specific flavour profile. After the origins are roasted we blend different percentages of various origins to create our blends, each with their own unique characteristics.

 

We roast fresh every week

We roast coffee 3-4 days a week to ensure that our customers receive the freshest possible product at all time. Our specifically designed bags with a one way valve and resealable zip also preserves the coffee for longer. Every bag of coffee that leaves the roastery will have a roast date sticker on, which ensures the customer that the coffee direct from the roastery is freshly roasted.

 

Extraction perfection

We offer the following grind sizes - espresso, moka pot, filter, cold brew and plunger. This ensures that the grind size you order is perfect for every desired brewing method. In our eyes, the extraction of coffee is the most important part of the coffee making process to ensure ultimate flavour and this all starts with the grind.
